Peanut Butter Hearts
These peanut butter cookies are beyond fantastic! They are soft, chewy, salty-sweet, AMAZING! A few years ago I began making them heart-shaped for my daughter to take to school as valentines (because I was too cheap to go buy a box of valentines and candy). Now I've made them an unofficial tradition at our house. It's a GREAT mommy-and-me baking project, so spend some time this Valentine's Day making sweets with your little sweeties!
What you'll need:
3/4 c peanut butter
1/4 c crisco
1/4 c butter
1 egg
1 tsp vanilla
3 tbs milk
1 1 /4 c brown sugar
1 3/4 c self-rising flour
clear karo syrup and sprinkles (optional)
Cream peanut butter, butter, crisco, and sugar together. Add vanilla, and milk, then add the egg, mix until blended. Gradually add flour. Place dough in plastic container in fridge for a couple of hours (I do this with ALL cookie recipes. It just makes the dough cook more evenly, and helps prevent crunchy edges.)
When it's good and cold, get it out and get out your handy-dandy cookie scooper (if you don't have one of these, GET ONE...you won't regret it!) and place 3 dollops of cookie dough in a close triangle on the cookie sheet.
Now, in traditional peanut butter cookie fashion, use a fork to press down your lovely little cookie mounds. Then use the fork and your fingers to slightly shape the cookie into a heart (you will do this again when the cookies are done baking). I also shaped some single dollop cookies into hearts, and you'll see those a little later.
Place into an oven preheated to 350 degrees for 10-12 minutes. Immediately upon removal from the oven, use the spatula to help shape them up one more time, then place them on a cooling rack. When they are completely cool, brush them with just a touch of clear Karo syrup and top with Valentine sprinkes - red is my favorite, but I was completely out, so I went with pink and purple.
If you can resist eating the whole batch (12 if you make the giant hearts, 36 if you make the smaller size), place them into goodie bags, tie with ribbon, and add a super-cute conversation heart tag. Happy Valentines Day to you!
